Cavegirl Kitchen – Choc chip cookie muffins

After seeing a random post on Instagram of freshly baked chocolate chip cookies from Subway (of all places, but they did look delicious), I decided it was time to attempt to bake some of my own again. The last time I took on the challenge to bake a Paleo cookie it ended in some sort of strange cake hybrid that even Suzie wouldn’t eat (and thats saying something!), this isn’t to say that these ones didn’t turn out as a weird cake hybrid too, the difference being these ones taste amazing! I promise!



2 cups of ground almonds

1 teaspoon of baking soda

1/4 teaspoon of salt

3 tablespoons coconut oil (melted)

1 teaspoon vanilla extract

1/4 cup maple syrup

2 whole eggs

1/2 cup dark chocolate chips


Add the dry ingredients to a mixing bowl, then mix all the wet ingredients in a separate bowl. Combine the two together and whisk thoroughly (I used the nutri bullet). Spoon the mixture into bun cases and bake in the oven on 190 degrees until golden brown and cooked through.

The “cookies” should come out hard on the outside and soft and gooey on the inside, with the chocolate chips melted.
