This past weekend Wonder Woman Workshops UK held the first of many annual Tricnic’s (training picnic). The rain held off which was fantastic and everyone had a great time playing sports day style races.
To mark the occasion I baked an almond and dark chocolate marble cake which went down a storm with adults and children alike, check out the recipe and post your creations with the hashtag #cookingwithkirsty

Dark chocolate raspberry and almond cake
Ingredients –
6 large eggs
250g ground almonds
10ml almond essence
200g honey
85g dark chocolate (I used Lindt 90%)
Large handful of raspberries
Tsp bicarbonate of soda
Topping –
100g dark chocolate
Roasted almonds to decorate
Crack the eggs into a bowl and stir in the ground almonds, I normally use a hand blender to create a smoother consistency. Add the almond essence, honey and bicarbonate of soda and mix well. Melt 85g of dark chocolate in a pan and stir through the cake to create a marble effect, finally add the raspberries and bake on 180 degrees c for 30 – 40 minutes or until cooked through.
Melt the 100g of dark chocolate whilst allowing the cake to cool, spread evenly over the top and sides, add the roasted almonds and place in the refrigerator to set.
